Banana Egg Pancakes

Ingredients:

  • 2 bananas (easier with riper bananas)

  • 4 eggs

  • 1/2 tablespoon Cinnamon

  • 1 tablespoon Vanilla

  • Butter for the pan

  • Other possible additions: oats, protein powder, cocoa powder, fruit, or any nut butter. I even add chocolate chips in sometimes!

  • *You can make alter this recipe however you like. It’s 2 Eggs: 1 Banana Ratio.

Directions:

  1. Combine Bananas, Cinnamon, Eggs, and Vanilla. Blend together.

  2. Heat pan on medium to low heat. Butter the pan.

  3. Using a 1/2 cup serving cup pour batter onto pan.

  4. When the batter bubbles and the ends seem to have solidified, use a spatula and flip the pancake over.

*Tip: This recipe is easiest to mix in a blender or with an immersion blender in a bowl. If you don’t have either a fork will work to mash the bananas and whisk the eggs.

*Tip: Wipe the pan off in between each pancake set so the butter doesn’t burn.

*Tip: Put the oven on 200 degrees so you can keep the pancakes warm while you’re making the whole batch.
