fried Halloumi & greek salad wrap

Ingredients:

  • 1 (8.8 oz) Halloumi Cheese

  • 1/2 cup Grape Tomatoes

  • 1/2 cup Persian Cucumbers

  • 1/4 cup Kalamata olives

  • 2 Little Gem heads of lettuce (or 1 Romaine Lettuce Heart)

  • Tzatiki Sauce

  • Olive Oil

  • Greek Seasonings (Oregano, Dill, Onion Powder, Garlic Powder, Salt & Pepper)

  • Pita Bread or Wrap of choice

Directions:

  1. Make greek salad: Chop up the little gem lettuce, tomatoes, cucumbers, and kalamata olives. Combine in a large bowl.

  2. Drizzle salad with olive oil and greek seasonings. Toss together.

  3. Start to stack your pita. First spread a layer of tzatiki on the pita. Add the mixed salad on top. Set aside.

  4. Slice Halloumi cheese in thin slices.

  5. In a dry non-stick pan over medium heat fry halloumi cheese. Each side will need about 2-4 minutes.

  6. Place hot cheese on top of your prepared pita and enjoy!
