Honey Glazed roasted Carrots

Ingredients:

  • 1 lb Carrots

  • 2 tablespoons Butter (preferably grass fed butter)

  • 2 tablespoons Olive Oil

  • 2 Tablespoons Honey (preferably local honey which is great for allergies)

  • 1/4 teaspoon Salt

Directions:

  1. Preheat oven to 400 degrees.

  2. Wash carrots and remove any greens. Peeling the carrots is completely optional.

  3. If using larger carrots slice 2/3 inch thick lengthwise and place on a parchment paper lined baking sheet (foil is okay too!).

  4. On the stovetop, melt the butter, olive oil, and honey in a small saucepan over low heat.

  5. Once melted and bubbling a bit, pour over carrots.

  6. Sprinkle with salt.

  7. Cover with foil and put in the oven (this steams the carrots and gets the soft quick!). Test with a fork at 15 minutes that they are fork tender

  8. Once soft, uncover and cook for 15-30 more minutes until they appear chewy and soft.

    *Tip: I like to broil them for a few minutes at the very end if they need a little more of that chewy glaze.
