White Bean “Chicken” Salad

Ingredients:

  • 1 can of white beans (Great Northern Beans)

  • 1-3 Stalks Celery

  • 1 oz Dried Cranberries

  • 2 tbs sliced almonds

  • 1 whole Scallion

  • 1/4 cup Mayonnaise

  • 1/4- 1/2 Lemon (to juice)

  • Olive Oil

  • Salt & Pepper to taste

Directions:

  1. Peel and chop up the celery into 1/4 inch pieces

  2. Roughly chop dried cranberries

  3. Thinly slice scallion (discard the root end)

  4. Roughly chop up sliced almonds

  5. Heat about 1 1/2 tablespoons of olive oil in a medium saucepan over medium high heat. Add beans to the pan. Cook 3-4 minutes until warmed through, stirring occasionally. Remove from heat

  6. Place beans into a bowl and mash with fork. Add celery, cranberries, scallions and onions. Mix all together

  7. Add lemon juice, mayonnaise, and salt and pepper. Mix together. Add more seasonings as necessary

  8. Enjoy on toasted bread, with crackers or on top of a green salad!
