Chickpea Tuna
Directions:
Strain and rinse chickpeas. Gently pulse them in a food processor. Place blended chickpeas in a bowl.
Cut your onion in half. Place one half aside to use for another time. Take the other half and cut it into pieces and throw into the food processor. Add 1/2 to all of the onion into the bowl with the chickpeas.
Peel the outside of the celery and chop into bite size pieces. Add to the bowl with the chickpeas and onions.
Add the mayonnaise and Mustard to the bowl.
Squeeze the lemon juice into the bowl.
Mix thoroughly. Add salt, pepper and garlic powder to taste.
I like to serve this on toasted bread with avocado, tomatoes and jarlsburg cheese!
This is great as a tuna melt, or to eat with crackers!
