egg bites

Ingredients:

  • 7 pasture raised eggs

  • 1/4 cup milk of choice

  • 1/2 cup baby spinach

  • 1/4 cup shredded cheese of choice (cheddar, parmesan, swiss all good options)

    • veggies are interchangable- some options:

  • 1/2 bell pepper, chopped

  • 5 pieces of broccoli, cooked & chopped

  • 1 zucchini chopped

  • 1/2 cup Spinach, chopped

  • 1/4 cup peas

  • 1/4 cup tomatoes

Directions:

  1. Preheat your oven to 350 degrees.

  2. Spray muffin tin generously with nonstick spray.

  3. In a medium bowl mix eggs, milk, salt, and pepper to taste.

  4. To each muffin slot, add about 1 tbsp of greens (like spinach), whatever veggies you choose, and a sprinkle of cheese.

  5. Pour the egg mixture over each slot leaving little room at the top.

  6. Bake egg bites for 20 minutes. If the top is not fully cooked (you can give it a little jiggle to see) return to the oven cooking in 3-minute increments. Enjoy!
