crispy chocolate peanut butter balls

Ingredients:

  • 1 1/4 cup organic Brown Rice Crips Cereal

  • 1/2 cup creamy salted Peanut Butter

  • 1/2 cup local organic Honey

  • 1 bag organic semisweet chocolate chips (you could choose milk chocolate or dark chocolate- totally your call!)

Directions:

  1. In a large bowl combine, Brown Rice Cereal, Peanut Butter & Honey until a thick and thicky batter forms.

  2. Using a scooper, scoop out balls (you may need to roll them, but at least using that scooper will make everything the same size!) and place on a parchment lined cookie sheet.

  3. Place balls in the fridge for minimally 20 minutes.

  4. Using the double boiler method (a glass bowl over a pot filled with some water), melt the chocolate, stirring constantly. Please make note the bowl gets hot so you’ll need to have an oven mitt on.

  5. Coat each ball in the melted chocolate and put back into the fridge until the chocolate sets. I like to keep mine in the fridge and eat them chilled, always. Enjoy!
